Egg and walnut salad.

I need to eat more salads and less carb-based meals (not that i’m afraid of the big, scary ‘C’ word, i just haven’t necessarily been doing enough exercise lately to warrant them in every meal). I’ll eat a truckload of vegetables, either steamed or in a juice or baked, but for some reason I lose interest in a salad really quickly. I often find them very acidic or tangy or some bizarro pallate issue, and never very filling. So here is one i made for dinner tonight with added protein and omega-3 fats to try and make it a decent meal.

If you haven’t tried it before, hard-boiled egg chopped through a salad with walnuts and beetroot is really really tasty. I also added a small amount of cheese, and a host of other veggie delights such as mushrooms, capsicum, carrot, mixed greens and tomato. Served with some good-quality balsamic, this salad monster filled me up and was a nutritional hit!
